Sausage and three cheese pizza

Sausage and three cheese pizza
  • Ingredients

    • 1 tbsp canola oil
    • 200 g (about 1/2 lb) mild Italian sausage meat
    • ½ small onion, chopped
    • 1 red bell pepper, diced
    • Salt and pepper to taste
    • 450 g (1 lb) pizza dough
    • Extra-fine semolina flour (for preparation)
    • ⅔ cup Rao’s pizza sauce
    • ¾ cup smoked mozzarella (or smoked caciocavallo), grated
    • ¼ cup grated Parmesan
    • ½ cup ricotta
    • 1 tbsp chopped fresh thyme
  • Directions

    1. In a large skillet, heat the oil over medium heat. Cook the sausage meat for 5 to 6 minutes, breaking up the meat as it cooks, until nicely browned.
    2. Add the onion and bell pepper. Continue cooking for 3 to 4 minutes, stirring, until the vegetables are tender. Season with salt and pepper. Remove from heat.
    3. On a lightly floured work surface, stretch the pizza dough into a circle about 30 cm (12 in) in diameter.
    4. Sprinkle a pizza peel or baking sheet with semolina flour, then place the dough on top.
    5. Spread the pizza sauce over the dough, leaving a border of about 2 cm (3/4 in). Top with smoked mozzarella and Parmesan, then spread the sausage mixture evenly over the pizza.
    6. Cook the pizza:
      a. In a pizza oven: Preheat the pizza oven according to the manufacturer’s instructions. Using the pizza peel, place the pizza in the oven. Cook for a few minutes, rotating the pizza by a quarter turn every 30 seconds, until the crust is nicely browned and the cheese is melted.
      b. In a conventional oven: Preheat the oven to 230 °C (450 °F). Place the baking sheet in the oven. Bake for 10 to 12 minutes, until the crust is nicely browned and the cheese is melted.
    7. Remove from the oven, top with spoonfuls of ricotta, and sprinkle with thyme.
