Enjoy shrimp, artichoke orzo and Rao’s roasted garlic sauce, where the flavours of the sea mingle with the sweetness of artichokes for a light and comforting dish. A little crumbled feta and fresh basil add the perfect finishing touch.

Ingredients

  • 375ml (11/2 cup) orzo
  • 454g (one pound) raw shrimp 16/20 thawed, peeled and dried well
  • 30ml (2 tbsp.) olive oil
  • 1 jar of Rao’s Roasted Garlic Sauce
  • 1 can (398ml) of artichoke hearts cut into quarters
  • 200g (11/4 cup) crumbled feta cheese
  • 45ml (3 tbsp.) chopped fresh basil
  • Salt and pepper to taste

Directions

  • Preheat a large pot of lightly salted water for cooking the orzo pasta.
  • Pat the shrimp dry with a paper towel and season them with salt and pepper.
  • Pour the olive oil into a large hot frying pan and sear the shrimp for 30 seconds on each side. Once seared, remove them and place them on a plate.
  • Add Rao’s Roasted Garlic Sauce and artichokes to the pan.
  • Let everything simmer gently for about 10 minutes.
  • Meanwhile, cook the orzo al dente, drain the pasta, and add it to the sauce.
  • Then add the shrimp, feta, and basil, and mix gently. Reheat for 2 minutes, then serve.

Tips

  • You can replace the orzo with another variety of short pasta.
  • Avoid adding too much salt to the recipe, as feta cheese is very salty.
  • In this recipe, you can substitute chicken for shrimp.
  • For a good al dente pasta texture, avoid overcooking it in boiling water, as it will continue to cook in the sauce.
