Orzo with shrimp and artichokes

Orzo with shrimp and artichokes
  • Ingredients

    375ml (11/2 cup) orzo

    454g (one pound) raw shrimp 16/20 thawed, peeled and dried well

    30ml (2 tbsp.) olive oil

    1 jar of Rao’s Roasted Garlic Sauce

    1 can (398ml) of artichoke hearts cut into quarters

    200g (11/4 cup) crumbled feta cheese

    45ml (3 tbsp.) chopped fresh basil

    Salt and pepper to taste

  • Directions

    1. Preheat a large pot of lightly salted water for cooking the orzo pasta.
    2. Pat the shrimp dry with a paper towel and season them with salt and pepper.
    3. Pour the olive oil into a large hot frying pan and sear the shrimp for 30 seconds on each side. Once seared, remove them and place them on a plate.
    4. Add Rao’s Roasted Garlic Sauce and artichokes to the pan.
    5. Let everything simmer gently for about 10 minutes.
    6. Meanwhile, cook the orzo al dente, drain the pasta, and add it to the sauce.
    7. Then add the shrimp, feta, and basil, and mix gently. Reheat for 2 minutes, then serve.

Tips and tricks

  • You can replace the orzo with another variety of short pasta.
  • Avoid adding too much salt to the recipe, as feta cheese is very salty.
  • In this recipe, you can substitute chicken for shrimp.
  • For a good al dente pasta texture, avoid overcooking it in boiling water, as it will continue to cook in the sauce.
